World's Healthiest Chicken Parmesan

Well, to that we direct you to the opening clause. So welcome, and don’t worry, flavor doesn’t have to be reserved for cheat day either!

Cook Time: 10 min (This will vary based on preferred browning of cheese)
Total Time: 20 min
Serves: 3 (Depending on breasts in package)
3 Chicken Breasts
1 oz Olive Oil (For Brushing)
1 tsp Red Pepper Flakes
1 tbsp Oregano
1 tbsp Ricotta [Fat-Free] (Per Chicken Breast)
1 tbsp Tomato Paste (Per Chicken Breast)
Turn stove top burner on high. Preheat a cast iron skillet, or oven safe pot, with a quick spray of olive oil. Butterfly Chicken breasts, and place cut side down on skillet. Lightly spray with more Olive oil. Sprinkle on the pepper and oregano. Cook until about 1/8 inch of white begins to appear on breast in contact with pan. Turn the broiler on high, and place oven rack about 6 in from element. Cook in broiler for 5 minutes, cover with Ricotta and cook for 3 more minutes, cover with Tomato Paste and cook for the remaining 2 minutes.
Serve over a big mound of broccoli.
